Radishes

Radishes go from seed to plate faster than almost anything else you can grow, which makes them oddly satisfying for beginners.

Radishes are the fastest crop in most kitchen gardens, ready in as little as a month from sowing, which makes them useful for filling gaps between slower crops. They turn woody and fiercely hot within days of maturing, so they’re best pulled promptly rather than left β€˜just in case’.
